How is Molasses Made?
Traditional molasses production starts with the extraction of juice from the fruit. The fruit juice, clarified by burnt soil, is separated and transferred to large pots for boiling. During boiling, foam called "kef," which can spoil the flavor and clarity, is removed. As it thickens, molasses begins to release its distinctive wonderful aroma. The spoon test is used to check the consistency; molasses is at the right consistency when it drips not from one point but simultaneously from two sides of a spoon. Large bubbles forming during boiling, known as "bull's eye," are another indicator that the molasses is cooked.
